L’altro Hong Kong located at L Place, Central will be launching the anticipated menus paying homage to the ‘holy grail of gastronomy’ – ‘Alba White Truffle Season’ by two Michelin-star Chef Philippe Leveille on September 30, 2015.
Two Michelin-star Chef Philippe Leveille is personally sourcing finest white truffles from Italy’s Piedmont region for his annual gastronomic tribute to the world’s rarest and most expensive delicacy at L’altro Hong Kong. This influential chef has been joining this year’s hunt with trained dogs in the forests of Alba to ensure the prized ‘white gold’ served to Hong Kong gourmets is of the very highest quality.
Chef Leveille is closely connected to the hunters from over two decades at the helm of his flagship restaurant Miramonti L’altro in neighbouring Lombardy – which has remarkably retained two-Michelin stars for 15 consecutive years.
‘Alba White Truffle Season’ Menu
The traditional farmhouse truffle marriage is with egg and Chef Leveille is serving three variations on the authentic theme: with Slow-cooked Egg & Crispy Parmigiano Reggiano Fondue; in a simply old-fashioned serving with Two ‘Sunny Side’ Fried Eggs; and shaved onto Creamy ‘Egg in Shell’, with a sprinkle of chives.
Appetisers on the culinary opera extend to white truffle ‘All’ Albese Raw Beef Tartare, prepared according to local Alba tradition with hand-chopped dry-aged raw beef, served with pickled cucumber, roasted brown onion, parsley and raw egg yolk; while Roasted Scallops with Cauliflower; and Asparagus in Light Garlic Sauce with Anchovies enhance the exceptional flavours of white truffles.
The most traditional white truffle recipes of all accompany pasta or risotto, and three interpretations are found on this year’s menu, headlined by Miramonti L’altro Risotto, one of the most famous dishes served at his 2-Michelin Star restaurant in Brescia. The simple handcrafted Tagliolini with Butter is an opportunity to savour white truffles at its purest and heartiest, while the shavings take old-fashioned Spaghetti Carbonara with Italian Cured Pork Cheek & Pecorino Cheese to a heavenly new dimension.
Likewise, main course of Veal Chop “Milanese” with Mashed Potato, using premium Dutch veal and Japanese bread crumbs, elevates a simple farmhouse favourite and buttery mash to an astonishing gourmet experience.
Finally, dessert is also as provincially simple and rustic as the Alba countryside, with the ‘Gift of the Gods’ bringing a touch of magic to traditional Hazelnut Soufflé and Milk Gelato, with the oil from the nuts pairing famously with the nutty flavours of truffle.
Chef Leveille has experimented with contemporary variations on his white truffle menus in the past, but this year’s tribute reverts firmly towards tradition and authentic simplicity.
